A Southern Californian, I was amused that he was bumfuzzled by black mission figs. They go back hundreds of years here - still found growing in many back yards - but may not be a standard food item in his neck of the woods.
He’s an amusing guy. This is a good chance of pace.
I understood he was targeting trendy pretentiousness in some restaurant menus, but he was a bit overboard with his skeptical reaction to commonly understood nomenclature such as "char" and "black mission fig." He was downright silly about the fig.
Well placed shot at an overly pretentious industry. Those restaurants must pay specialty writers thousands of dollars to make a piece of whitefish sound like it was created by Louis Vuitton. I can get past the menus but can not tolerate the effeminate waiters who visit your table every two minutes in the belief that they are also hired to be your entertainment. When you are trying to have a quiet dinner conversation sometimes you are better off going to Cracker Barrel. The menus are in English and the staff are too busy to bother you, they refill your tea and move on.

We have seen photos of the chefs nearly bent double over a plate, fiddling with the positioning of a bit of this atop a tiny, elaborately constructed pile of that.
This menu-composing thing goes with that.
Thus the pendulum swung a few years ago and meatloaf and mac and cheese (not necessarily your Mother’s) came back with a vengeance.
My latest interesting read is a cookbook from The Publican in Chicago. They are the opposite of the prissy little N.Y. foodies, using almost everything that comes with the critter, and loving fat and salt.
I prefer menus that show a picture of the dish. /s When they get into lavish descriptions of expensive to source ingredients and over the top preparations they´re just trying to justify the ridiculous price they´re charging. There are too many excellent, unpretentious restaurants that have been around for years to waste time at the hot restaurant du jour. For those with the wherewithal to regularly patronize these establishments, more power to you, but excellent ingredients, simply prepared, is what impresses me.
The last sentence of #9´s post had me think back to one of my favorites restaurants, many years ago, Durgan-Park at Faneuil Hall in Boston. We used to get Prime Rib (so big it hung off the sides of the plate) and for dessert strawberry shortcake - so big it was served in a standard 7-9" deep dish soup bowl - and it was affordable back then. Now the seating is by individual tables vs. sitting w/strangers at a long table - which was the other 1/2 of the fun eating there. Met some great people that way, from the wildly strange, to exotic foreigners, vs. movie stars and we "normals". ; ) I checked their menu today & sadly I must be content with my memories however wonderful they are.
