Gabe Luddy, fourth-generation cheesemaker at Vella Cheese Co. in Sonoma, makes his Dry Jack the same way his grandfather and great-grandfather did - he rolls and presses curds into large wheels of cheese, then brines and coats the wheels before sliding them onto wooden racks. There they age, from seven months to several years. A U.S. Food & Drug Administration statement that became public last week puts Vella's 83-year-old practice in doubt. In what the agency called a clarification, the FDA declared that wooden racks similar to the one Vella uses "cannot be adequately cleaned and sanitized."

A quarter-century or so ago almost everybody switched to plastic cutting boards. They would be easier to keep clean because wood is porous. Afterwards they found that wood cutting boards always had less bacteriological problems than plastic. Go figger.

Really? They don´t have more pressing issues to work on? I assume cheese has been made this way for thousands of years. While I have heard of The Black Death and other pandemics I don´t think there has been one named after a cheese.

Best guess is that cheese has been made for many thousands of years and we all see how the popularity of cheese eating coincides with the serious decline in the world´s population. s/off


We´ve morphed into a kindergarten guidance bureaucracy with a "now we´ll do this, now we´ll do that - quick think of something to get the kiddies attention" agenda.

Let me guess: it´s not one of the Wookie´s favs ?

Could we see their mortality rate ?

After signing up for the recall list at the FDA site a few months back, it seems they should focus on contaminated medication with ´visible metal particles" instead of cheese.

They´re worried about wooden racks which might (no evidence they have hurt public health) harbor bacteria, but they´re not concerned about the millions of illegals pouring into the country bringing any number of diseases with them.

The city of Portland is sending 16 white male employees and managers, including Mayor Charlie Hales and Police Chief Mike Reese, to a three-day diversity training conference at a Mt. Hood-area resort this week. The training, run by the company White Men as Full Diversity Partners, costs $56,000 and will be funded in part by Hales´ office and the Portland Police Bureau. According to Hales´ office, the training focuses on eliminating racism, sexism and homophobia in organizations. The 16 staffers will be at the conference from 5 p.m. Monday through Thursday at 2:30 p.m.

One of the odder stats of Election Night: As of Wednesday morning, 287,590 Californians had cast ballots for indicted state Sen. Leland Yee for secretary of state. That’s good for nearly 10 percent of the vote. That’s also more votes than five other secretary of state candidates who haven’t been indicted received.
