| DES MOINES, Iowa- The smell of bacon was in the air Saturday as thousands converged on Iowa´s capital city for an increasingly popular festival celebrating all things connected with the meat. Some people wore Viking hats and others walked around with makeshift snouts for the Blue Ribbon Bacon Festival. The annual event featured more than 10,000 pounds of bacon served in unusual ways, such as chocolate-dipped bacon and bacon-flavored cupcakes and gelato. I de-glaze the chicken liver pan with Madeira when I have it, or sherry when I do not. Boil down to a thick rich oniony sauce.
Sadly, bacon violates my low salt diet--but less than you might think! Depending on the brand, Maple Leaf maple smoked has the same level of sodium in 2 slices than many a single slice of conventional white bread! (Even before buttering!!)
In Waimea Hawaii, at the farmers market, one booth sells BLT´s made by the family of the farmer who grows the pigs and smokes his own bacon. Beautifully lean, meaty, full pork flavor....now back to my kale (sniff!)

Candied Bacon:
1/3 cup light brown sugar
1/2 teaspoon cumin, ground
8 slices bacon
1) Preheat the oven to 400 degrees.
2) Mix the brown sugar and cumin. Dredge each bacon slice on both sides through the sugar mixture.
3) Place the bacon on a baking pan with sides and bake for 15 to 20 minutes, depending on the thickness of your bacon. Place on a paper towel to drain the excess fat.
