Gullible, naive people have created a mystique around the wild horses that is not only misguided, but in error. Almost all of them are descended from domestic horses. There is very little exotic bloodline. And those starry eyed believers have no idea of the damage those rampaging herds do to grasses and erosion control. The BLM has enjoyed a protective bureaucracy that allowed BLM employees and favored friends to shuttle the horses through phony adoption procedures and, eventually, to the slaughter houses. There is real money in the slaughter of a 1200 pound horse.
There´s nothing romantic about these animals on the plains. And there has been real criminal activity inside the BLM Wild Horse Program for at least twenty years. I know what I´m talking about.

Lardoon the meat with the lard and slivers of carrots. Dice the other vegetables and put them with the meat and the spices except the paprika in a bowl; pour the wine over everything, cover and marinate in the refrigerator for three days, turning the meat occasionally.
Pat the meat dry (reserve the vegetables and the marinade), flour it, and brown it in the oil, in a pot over a brisk flame. Add the vegetables, and when they´ve cooked for a few minutes, pour the marinade over the meat. Reduce the heat to a simmer and cook for about three hours. Once the meat is done, remove it to a platter and blend the sauce.
Return the sauce to the fire, thicken it with the butter-flour ball, and season it to taste with paprika. Pour the sauce over the meat and serve, with polenta and the side dishes you prefer.
The wine? Amarone or Valpolicella Superiore, or a Cabernet-Merlot blend along the lines of Valcalepio.

The main problem is, the ranching & farming industry have a better lobbying business operating in Washington than the Mustang/Burros do. Years ago I read that less than 5% of our beef industry operates in the dry arid regions where the horses & burros are. But the land is leased to ranchers & has been for decades, long enough that they think of it as theirs, instead of the American people. They pay next to nothing to run cattle on the land & use it as theirs. Most of the ranchers have put in wells for their cattle & resent every weed & every gulp of water the equine take.
This story is BS. The rabid Interior Dept has been slaughering horses by the thousands and selling the carcasses to Canada for transport overseas. There are only about 5,000 left in the vast western U.S.
Horses evolved on this continent, so to say it´s an invasive species is incorrect.
